Description

Sweet, tart, and satisfying, these homemade cherry crumble bars combine juicy cherries with a buttery crust and a crispy crumble topping.


Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup unsalted butter, softened
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 2 cups fresh or frozen cherries, pitted and halved
  • ¼ cup granulated sugar (adjust based on sweetness of cherries)
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • ½ tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal later.
  2. Combine the flour, sugar, baking powder, and salt in a large mixing bowl. Add the softened butter and mix until the mixture resembles coarse crumbs.
  3. Add the egg yolk and vanilla extract to the mixed dry ingredients. Stir until the dough starts to come together. Keep about one cup of the mixture aside for the crumble topping. Press the remaining mixture evenly into the prepared baking dish.
  4. Toss together the cherries, sugar, cornstarch, lemon juice, and vanilla extract in another bowl.
  5. Spoon the cherry filling evenly over the crust, making sure all the cherries are well-distributed. Crumble the reserved dough over the top of the cherries.
  6. Bake in the preheated oven for about 30 minutes, or until the crumble is golden brown and the cherries are bubbling.
  7. Allow the bars to cool in the dish for at least 10 minutes before lifting them out using the parchment paper. Transfer to a wire rack to cool completely. Cut into squares and serve!

Notes

For healthier alternatives, use gluten-free flour or natural sweeteners. You can also make these vegan by substituting butter and using a flax egg.
