Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened (or melted)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups ripe peaches, peeled and diced (about 3 medium peaches)
  • ½ cup chopped nuts (optional, walnuts or pecans work great)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or line it with parchment paper for easy removal.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the flour mixture to the wet ingredients, stirring until just combined.
  6. Gently fold in the diced peaches and nuts.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  9. Once done, allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Serve as a breakfast treat or dessert; can be stored in an airtight container for 3-4 days.
