- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- ½ cup unsalted butter, softened
- 1 cup rolled oats
- ½ tsp baking powder
- ½ tsp salt
- 1 tsp vanilla extract
- 4 cups fresh peaches, peeled and sliced
- ½ cup brown sugar
- 1 tbsp lemon juice
- 1 tsp cinnamon
- 1 tbsp cornstarch
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan lightly.
- Cream together the softened butter and granulated sugar using a hand mixer or a stand mixer until light and fluffy, about 2 minutes.
- Add flour, oats, baking powder, salt, and vanilla extract into the butter mixture and mix until combined.
- Press about two-thirds of this crumble mixture firmly into the bottom of your prepared baking pan.
- Mix the sliced peaches with brown sugar, lemon juice, cinnamon, and cornstarch, then spread this peach mixture evenly over the crust.
- Crumble the remaining dough mixture over the peach filling.
- Bake for 35 to 40 minutes, or until the top is golden brown and the peaches are bubbling slightly.
- Allow to cool completely in the pan on a wire rack before slicing.
Notes
For healthier alternatives, you can use whole wheat flour, coconut oil instead of butter, or a gluten-free flour blend.
