  • 2 tablespoons Dijon mustard

  • 3 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 cup low-sodium chicken broth
  • 1 tablespoon lemon juice
  • Optional: 1 tablespoon honey for a touch of sweetness
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). While it heats, lightly prepare your baking dish with cooking spray or a drizzle of olive oil.
  2. Whisk together the Dijon mustard, minced rosemary, olive oil, minced garlic, salt, and pepper in a mixing bowl.
  3. Place the chicken breasts in the baking dish and pour the marinade over them, ensuring they are coated evenly.
  4. Pour the chicken broth into the dish around the chicken and add a splash of lemon juice over the top.
  5. Cover the baking dish with foil and bake in the preheated oven for about 20-25 minutes, removing the foil in the last 5-10 minutes.
  6. Check the chicken is fully cooked with a meat thermometer reading at 165°F (74°C), then let it rest for about 5 minutes before slicing.

Notes

Marinate the chicken overnight for enhanced flavor. Serve with steamed vegetables or grains for a complete meal.
