- 2 tablespoons Dijon mustard
- 1 tablespoon fresh rosemary, minced (or 1 teaspoon dried rosemary)

- 3 cloves garlic, minced
- Salt and pepper, to taste
- 1 cup low-sodium chicken broth
- 1 tablespoon lemon juice
- Optional: 1 tablespoon honey for a touch of sweetness
- Optional: Fresh parsley, chopped, for garnish
Instructions
- Preheat your oven to 375°F (190°C). While it heats, lightly prepare your baking dish with cooking spray or a drizzle of olive oil.
- Whisk together the Dijon mustard, minced rosemary, olive oil, minced garlic, salt, and pepper in a mixing bowl.
- Place the chicken breasts in the baking dish and pour the marinade over them, ensuring they are coated evenly.
- Pour the chicken broth into the dish around the chicken and add a splash of lemon juice over the top.
- Cover the baking dish with foil and bake in the preheated oven for about 20-25 minutes, removing the foil in the last 5-10 minutes.
- Check the chicken is fully cooked with a meat thermometer reading at 165°F (74°C), then let it rest for about 5 minutes before slicing.
Notes
Marinate the chicken overnight for enhanced flavor. Serve with steamed vegetables or grains for a complete meal.
