Ingredients
1 lb chicken breasts or thighs, cut into bite-sized pieces
12 oz pasta (linguine, fettuccine, or penne)
4 cloves garlic, minced
1 cup freshly grated parmesan cheese
1 cup heavy cream or half-and-half
2 tbsp olive oil or butter
Salt and black pepper to taste
Optional: 1 cup spinach, peas, or mushrooms
Fresh parsley or basil for garnish
Instructions
Cook the pasta: Boil in salted water until al dente, reserve ½ cup pasta water, then drain.
Prepare the chicken: Season chicken with salt, pepper, and garlic powder. Sear in olive oil or butter until golden brown, or bake at 375°F for 20–25 minutes.
Make the sauce: Sauté garlic in olive oil or butter until fragrant. Add cream gradually, then stir in parmesan cheese until smooth. Season with salt, pepper, and a pinch of nutmeg.
Combine everything: Toss pasta into the sauce, add chicken, and mix gently. Fold in optional vegetables. Use reserved pasta water to loosen sauce if needed.
Serve: Garnish with fresh parsley or basil and extra parmesan. Serve immediately for best flavor.
