Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh peaches, diced (about 34 medium peaches)
  • Optional: 1/2 cup chopped nuts (walnuts or pecans)
  • Optional: 1/2 cup raisins or dried cranberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×5-inch loaf pan by greasing it and dusting lightly with flour.
  3. Combine the flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a large mixing bowl.
  4. Mix the granulated sugar, brown sugar, and vegetable oil in another bowl. Add the eggs one at a time, followed by the vanilla extract.
  5. Fold the diced peaches into the bowl. If using nuts or dried fruits, add them now.
  6. Combine the dry mixture with the wet mixture, stirring until just combined.
  7. Pour the batter into your prepared loaf pan.
  8. Bake for 55–60 minutes or until a toothpick comes out clean.
  9. Cool the bread in the pan for 10 minutes before transferring it to a wire rack.

Notes

Optional ingredients can be omitted or swapped based on dietary preferences. Loaf can be stored in an airtight container or frozen for later.
