- 8 ounces fettuccine or preferred pasta
- 1 pound boneless, skinless chicken breasts, diced
- 2 tablespoons Cajun seasoning (adjust to taste)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 small onion, chopped
- 1 red bell pepper, diced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Start by cooking the pasta. In a large pot of boiling, salted water, add the pasta and cook according to package instructions until al dente. Once cooked, drain and set it aside.
- While the pasta is cooking, season the diced chicken breasts with the Cajun seasoning, salt, and pepper. Mix them well so every piece is coated with those delightful spices.
- In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned chicken. Sauté for about 5-7 minutes, or until the chicken is golden and cooked through. Remove the chicken from the skillet and set aside.
- Using the same skillet, add the chopped onion and red bell pepper. Sauté for about 3-4 minutes until softened. Then add the minced garlic, cooking for an additional minute until fragrant.
- Lower the heat to medium. Gradually stir in the chicken broth, scraping any browned bits off the bottom of the skillet. Let it simmer for a couple of minutes to reduce.
- Slowly pour in the heavy cream, stirring continuously to create a luscious sauce. Allow the mixture to simmer for a few more minutes until it thickens slightly.
- Stir in the grated Parmesan cheese, mixing until it melts completely into the creamy sauce. Then, return the cooked chicken to the skillet, mixing well.
- Finally, add the cooked pasta to the sauce. Toss gently until every strand is coated in that glorious creamy Cajun goodness.
- Once plated, don’t forget to garnish with freshly chopped parsley for a pop of color and flavor!
Notes
For a lighter option, substitute heavy cream with half-and-half or coconut milk. To make it vegetarian, use firm tofu or mixed vegetables.
