  • 8 ounces fettuccine or preferred pasta
  • 1 pound boneless, skinless chicken breasts, diced
  • 2 tablespoons Cajun seasoning (adjust to taste)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • 1 red bell pepper, diced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Start by cooking the pasta. In a large pot of boiling, salted water, add the pasta and cook according to package instructions until al dente. Once cooked, drain and set it aside.
  2. While the pasta is cooking, season the diced chicken breasts with the Cajun seasoning, salt, and pepper. Mix them well so every piece is coated with those delightful spices.
  3. In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned chicken. Sauté for about 5-7 minutes, or until the chicken is golden and cooked through. Remove the chicken from the skillet and set aside.
  4. Using the same skillet, add the chopped onion and red bell pepper. Sauté for about 3-4 minutes until softened. Then add the minced garlic, cooking for an additional minute until fragrant.
  5. Lower the heat to medium. Gradually stir in the chicken broth, scraping any browned bits off the bottom of the skillet. Let it simmer for a couple of minutes to reduce.
  6. Slowly pour in the heavy cream, stirring continuously to create a luscious sauce. Allow the mixture to simmer for a few more minutes until it thickens slightly.
  7. Stir in the grated Parmesan cheese, mixing until it melts completely into the creamy sauce. Then, return the cooked chicken to the skillet, mixing well.
  8. Finally, add the cooked pasta to the sauce. Toss gently until every strand is coated in that glorious creamy Cajun goodness.
  9. Once plated, don’t forget to garnish with freshly chopped parsley for a pop of color and flavor!

Notes

For a lighter option, substitute heavy cream with half-and-half or coconut milk. To make it vegetarian, use firm tofu or mixed vegetables.
