Description
A delightful dish featuring tender chicken glazed in a luscious brown sugar and pineapple sauce, balancing sweet and savory flavors.
Ingredients
Scale
- 4 boneless, skinless chicken breasts
- ¾ cup brown sugar
- ½ cup pineapple juice
- 1 cup fresh pineapple chunks (or canned)
- ¼ cup soy sauce (or tamari for gluten-free)
- 3 cloves garlic, minced
- 1 teaspoon freshly grated ginger
- 1 tablespoon vegetable oil (or olive oil)
- Salt and pepper to taste
- Optional for garnish: sliced green onions and sesame seeds
Instructions
- Marinate the chicken in a mixture of brown sugar, pineapple juice, soy sauce, minced garlic, and grated ginger for at least 30 minutes.
- Heat vegetable oil in a large skillet over medium-high heat.
- Sear the marinated chicken for about 5-7 minutes on each side until golden brown.
- Reduce the heat to medium, pour the reserved marinade over the chicken, and add pineapple chunks. Simmer for 10-15 minutes until cooked through.
- Remove the chicken and let it rest for 5 minutes while the sauce simmers.
- Slice the chicken, drizzle with thickened sauce, and garnish if desired.
Notes
For a lower-sugar version, use a sugar alternative. For gluten-free, ensure to use tamari. You can substitute chicken with firm tofu or tempeh for a vegetarian option.
