  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh or frozen blueberries
  • 1 cup rolled oats
  • ½ cup all-purpose flour
  • ½ cup brown sugar
  • ½ teaspoon ground cinnamon
  • ⅓ cup unsalted butter, melted

Instructions

  1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan and set it aside.
  2. Combine graham cracker crumbs, melted butter, granulated sugar, and ground cinnamon in a medium bowl. Press this mixture into the bottom of the prepared pan to form a crust. Bake for about 10 minutes, then let it cool slightly.
  3. Beat the cream cheese in a large mixing bowl until smooth and creamy. Gradually add the sugar, mix well, then add the sour cream, eggs, and vanilla extract until smooth.
  4. Fold in the blueberries gently. Pour the cheesecake filling into the cooled crust, spreading it evenly.
  5. Combine rolled oats, flour, brown sugar, ground cinnamon, and melted butter in a separate bowl for the crumble. Mix well and sprinkle over the cheesecake filling.
  6. Bake for 45-55 minutes, or until the edges are set but the center still jiggles slightly.
  7. Cool the cheesecake to room temperature, then refrigerate for at least 4 hours, preferably overnight.
  8. Dust with powdered sugar or garnish with blueberries before serving.
