Ingredients
For the Oat Crumble Base & Topping
1 ½ cups rolled oats
1 cup all-purpose flour
⅔ cup brown sugar
½ teaspoon salt
¾ cup unsalted butter, melted
1 teaspoon vanilla extract
For the Strawberry Filling
2 cups fresh strawberries, chopped
2 tablespoons granulated sugar
1 tablespoon cornstarch
1 teaspoon lemon juice
Instructions
Preheat oven to 350°F and line an 8×8-inch baking pan with parchment paper.
In a large bowl, mix oats, flour, brown sugar, and salt.
Add melted butter and vanilla, then stir until a crumbly mixture forms.
Press about two-thirds of the oat mixture firmly into the prepared pan.
In another bowl, toss strawberries with sugar, cornstarch, and lemon juice.
Spread the strawberry mixture evenly over the oat base.
Sprinkle the remaining oat crumble over the top without pressing it down.
Bake for 35–40 minutes, until the top is lightly golden and the filling is bubbly.
Cool completely before slicing into bars.
