  • 1/2 cup crushed cereal (cornflakes or Rice Krispies)

  • 1/4 cup melted butter (for topping)

  • 2 tbsp sugar (for topping)


Instructions

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  • Prepare the cookie dough: In a large bowl, beat together the softened butter and sugar until light and fluffy. Add the egg and vanilla extract, and mix until smooth.

  • Mix the dry ingredients: In a separate bowl, whisk together the flour and baking soda. Gradually add the dry ingredients to the wet mixture, mixing until combined.

  • Scoop the dough: Using a tablespoon or cookie scoop, drop cookie dough onto the prepared baking sheet. Leave some space between each cookie.

  • Prepare the crunch topping: In a small bowl, combine the crushed freeze-dried strawberries, crushed cereal, and sugar. Stir in the melted butter to bind everything together.

  • Top the cookies: Spoon the crunch topping onto each cookie, gently pressing it into the dough.
