Ingredients
1 cup all-purpose flour
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1 large egg
1 tsp vanilla extract
1/2 tsp baking soda
1/2 cup freeze-dried strawberries, crushed
1/2 cup crushed cereal (cornflakes or Rice Krispies)
1/4 cup melted butter (for topping)
2 tbsp sugar (for topping)
Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Prepare the cookie dough: In a large bowl, beat together the softened butter and sugar until light and fluffy. Add the egg and vanilla extract, and mix until smooth.
Mix the dry ingredients: In a separate bowl, whisk together the flour and baking soda. Gradually add the dry ingredients to the wet mixture, mixing until combined.
Scoop the dough: Using a tablespoon or cookie scoop, drop cookie dough onto the prepared baking sheet. Leave some space between each cookie.
Prepare the crunch topping: In a small bowl, combine the crushed freeze-dried strawberries, crushed cereal, and sugar. Stir in the melted butter to bind everything together.
Top the cookies: Spoon the crunch topping onto each cookie, gently pressing it into the dough.
Bake: Bake the cookies for 10-12 minutes, or until the edges are golden. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
