Ingredients
For the Muffins:
1 1/2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1/2 cup sour cream (or Greek yogurt)
1 tsp vanilla extract
1 cup fresh strawberries, diced
For the Crumb Topping:
1/2 cup all-purpose flour
1/4 cup granulated sugar
1/4 cup unsalted butter, cold and cubed
1/4 tsp salt
Instructions
Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
Make the crumb topping:
In a small bowl, combine 1/2 cup flour, 1/4 cup sugar, and a pinch of salt. Add the cold, cubed butter. Using a fork or your fingers, mix until the butter is incorporated and you get pea-sized crumbs. Set aside.Prepare the muffin batter:
In a medium bowl, whisk together the dry ingredients—flour, baking powder, and salt. Set aside.
In a large bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs, sour cream, and vanilla extract, and mix until smooth. Gradually add the dry ingredients, mixing just until combined.Add the strawberries:
Gently fold in the diced strawberries, making sure they are evenly distributed throughout the batter. Be careful not to overmix.Fill the muffin tin:
Spoon the batter into the muffin cups, filling each about 3/4 full. Sprinkle the crumb topping generously over each muffin.Bake:
Bake for 20-25 minutes, or until a toothpick inserted into the center of the muffins comes out clean. Let the muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
