Ingredients
2 cups sushi rice, rinsed and cooked
1 lb fresh salmon fillet, cut into bite-sized pieces
1/2 cup mayonnaise (or Kewpie mayo)
2–3 tbsp Sriracha (adjust to taste)
2 tbsp soy sauce (low-sodium recommended)
1 tsp sesame oil
1/2 cup cream cheese, softened
2 green onions, sliced
1 avocado, sliced (optional)
1 tbsp sesame seeds
Furikake or nori strips for garnish
Instructions
Preheat oven to 375°F (190°C).
In a small bowl, mix mayonnaise, Sriracha, soy sauce, and sesame oil.
Toss salmon with half of the spicy mayo mixture.
Spread cooked sushi rice evenly in a greased baking dish.
Layer salmon mixture over rice, then spread cream cheese evenly on top.
Bake for 15–20 minutes until salmon is cooked and the top is slightly golden.
Garnish with green onions, avocado slices, sesame seeds, and furikake/nori strips.
Let rest 5 minutes before slicing and serving.
Notes
For a milder version, reduce Sriracha.
Mini muffin tins make cute individual servings.
Serve with cucumber salad or edamame for a complete meal.
