Ingredients

  • 2 cups sushi rice, rinsed and cooked

  • 1 lb fresh salmon fillet, cut into bite-sized pieces

  • 1/2 cup mayonnaise (or Kewpie mayo)

  • 23 tbsp Sriracha (adjust to taste)

  • 2 tbsp soy sauce (low-sodium recommended)

  • 1 tsp sesame oil

  • 1/2 cup cream cheese, softened

  • 2 green onions, sliced

  • 1 avocado, sliced (optional)

  • 1 tbsp sesame seeds

  • Furikake or nori strips for garnish


Instructions

  • Preheat oven to 375°F (190°C).

  • In a small bowl, mix mayonnaise, Sriracha, soy sauce, and sesame oil.

  • Toss salmon with half of the spicy mayo mixture.

  • Spread cooked sushi rice evenly in a greased baking dish.

  • Layer salmon mixture over rice, then spread cream cheese evenly on top.

  • Bake for 15–20 minutes until salmon is cooked and the top is slightly golden.

  • Garnish with green onions, avocado slices, sesame seeds, and furikake/nori strips.

  • Let rest 5 minutes before slicing and serving.

Notes

For a milder version, reduce Sriracha.

Mini muffin tins make cute individual servings.

Serve with cucumber salad or edamame for a complete meal.
