A delicious Southwest Chicken Wrap loaded with juicy grilled chicken, fresh veggies, black beans, corn, and creamy Southwest sauce. Quick to make, high in protein, and perfect for lunch, dinner, or meal prep.
Ingredients
2 large flour or whole-wheat tortillas
2 chicken breasts, grilled or pan-seared
1 cup shredded lettuce
1/2 cup diced tomatoes
1/4 cup corn kernels
1/4 cup black beans, rinsed
1/2 avocado, sliced
2–3 tbsp Southwest sauce (or chipotle mayo/Greek yogurt dressing)
1 tsp chili powder, 1 tsp smoked paprika, 1/2 tsp cumin, salt and pepper
Instructions
Season chicken with chili powder, paprika, cumin, salt, and pepper. Cook until internal temp reaches 165°F. Slice or shred.
Warm tortillas to make them flexible.
Place shredded lettuce on the tortilla. Add chicken, tomatoes, corn, black beans, and avocado.
Drizzle sauce over the filling.
Fold sides in and roll tightly. Serve immediately or wrap for later.
