4 chicken pieces (thighs or drumsticks work best)

1 cup long-grain rice

1 medium onion, diced

2 cloves garlic, minced

2 cups chicken broth (warm)

2 tbsp butter or vegetable oil

1 tsp paprika

1 tsp salt

½ tsp black pepper


Instructions

Pat the chicken dry and season with salt, pepper, and paprika.

Heat butter or oil in a skillet over medium heat and brown chicken on both sides. Remove and set aside.

Sauté onions until golden, add garlic for 30 seconds.

Stir in rice and coat with the onion-garlic mixture.

Pour in warm chicken broth, return chicken to the pan, and bring to a gentle simmer.

Cover and cook on low heat for 25–30 minutes until rice is tender and chicken is cooked through.

Serve hot, letting the rich gravy soak into the rice.

Notes

Browning the chicken first adds depth and flavor to the gravy.
