Description

A hearty, comforting one-pan dinner that combines tender potatoes, crisp green beans, and savory sausage with melty cheese. Perfect for weeknights, family dinners, or meal prep, this casserole is easy to make, flavorful, and satisfying.

Ingredients

  • Prepare the sausage – slice or dice 12 oz of chicken, turkey, or beef sausage for the casserole base.

  • Trim the green beans – wash and remove the ends from 2 cups of fresh green beans.

  • Dice the potatoes – peel and cut 3 cups of Yukon gold potatoes into 1-inch cubes for even cooking.

  • Chop the onion – finely dice 1 medium onion to add sweetness and flavor.

  • Mince the garlic – crush 2 cloves of garlic to infuse aroma into the casserole.

  • Measure the cheese – prepare 1 cup of shredded cheddar, mozzarella, or a blend for a creamy, melty topping.

  • Prepare the milk or cream – pour ½ cup of milk or cream (optional) to create a richer texture.

  • Add fat for cooking – have 2 tablespoons of butter or olive oil ready to sauté vegetables and sausage.

  • Season the casserole – measure 1 teaspoon of salt, ½ teaspoon of black pepper, ½ teaspoon paprika, and ½ teaspoon dried thyme or Italian herbs (optional) to season everything evenly.

Instructions

  • Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

  • Prepare vegetables: Trim green beans, peel and dice potatoes, chop onions, and mince garlic.

  • Cook sausage: Sauté sausage in 1 tbsp butter or oil until browned. Remove and set aside.

  • Sauté vegetables: In the same pan, cook onions and garlic for 2–3 minutes, then add potatoes and cook for 5 minutes. Season with salt, pepper, paprika, and thyme.

  • Combine ingredients: Mix sausage, vegetables, green beans, cheese, and milk/cream (if using) in a bowl. Transfer to the baking dish.

  • Bake: Top with extra cheese. Bake uncovered for 25–30 minutes until potatoes are tender and cheese is melted and golden.

  • Serve: Let rest for 5 minutes before slicing. Garnish with fresh herbs if desired.

Notes

Crispier top: Broil for 2–3 minutes at the end of baking.

Make-ahead: Assemble the casserole a day in advance and refrigerate.

Vegetable variations: Add carrots, zucchini, or bell peppers for extra nutrition.

Freezer-friendly: Freeze unbaked casserole for up to 2 months; bake from frozen at 375°F for 50–60 minutes.

Cheese alternatives: Try a mix of cheddar and gouda for a richer flavor or use vegan cheese for dairy-free options.
