Ingredients
4 large flour tortillas
6 large eggs
1/4 cup milk
1/2 lb cooked sausage (beef, turkey, or chicken)
1 cup shredded cheddar or mozzarella cheese
1/2 cup diced bell peppers (optional)
1/4 cup diced onions (optional)
Salt and pepper to taste
Cooking spray or butter for the pan
Instructions
In a bowl, whisk together eggs, milk, salt, and pepper.
Heat a skillet over medium heat with cooking spray or butter. Add onions and bell peppers if using, and sauté for 2–3 minutes.
Add sausage to the skillet and cook until slightly browned.
Pour in eggs and scramble with the sausage and vegetables until fully cooked but still soft.
Warm tortillas briefly in a dry skillet or microwave to make them pliable.
Divide the egg and sausage mixture evenly among the tortillas. Sprinkle shredded cheese over each portion.
Roll the tortillas tightly, folding in the sides to form burritos.
Optional: Toast the burritos in a hot skillet for 1–2 minutes per side to make them crispy.
Serve immediately, or wrap individually for meal prep or freezing.
