Ingredients
2 medium sweet potatoes, sliced into ½-inch rounds
2 tablespoons olive oil
2 tablespoons honey
½ cup crumbled feta cheese
Salt and pepper, to taste
Optional: Fresh parsley or thyme for garnish
Instructions
Preheat oven to 400°F (200°C).
Toss sweet potato rounds with olive oil, salt, and pepper.
Arrange in a single layer on a parchment-lined baking sheet.
Roast for 20-25 minutes, flipping halfway through.
Drizzle honey over the rounds during the last 5 minutes of roasting.
Remove from oven, sprinkle with feta, and garnish with fresh herbs.
Serve warm and enjoy!
