Ingredients
1 lb (450g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
1 cup long-grain white rice (or brown rice for extra fiber)
1 ½ cups low-sodium chicken broth
1 cup fresh pineapple chunks (or canned in juice)
1 small onion, diced
2 cloves garlic, minced
1 tbsp olive oil
1 tsp ginger, grated
2 tbsp soy sauce (or low-sodium soy sauce)
Salt and pepper to taste
Optional garnish: chopped cilantro or green onions
Instructions
Heat olive oil in a large skillet over medium heat. Add chicken pieces, season with salt and pepper, and cook until lightly golden (about 5–7 minutes). Remove chicken and set aside.
In the same skillet, sauté onion, garlic, and ginger until fragrant (2–3 minutes).
Add rice and stir to coat in the aromatics. Pour in chicken broth and bring to a gentle boil. Reduce heat to low, cover, and simmer for 15 minutes.
Return the chicken to the skillet and add pineapple chunks. Cover and cook 5 more minutes until the rice is tender and chicken is cooked through.
Remove from heat, fluff the rice, and garnish with chopped cilantro or green onions. Serve hot!
