  • 2 chicken breasts (or thighs for extra flavor)

  • 1 cup of long-grain white rice

  • 1 can (15 oz) pineapple chunks (or 1 fresh pineapple, chopped)

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 2 tbsp soy sauce

  • 1 tbsp honey or brown sugar

  • 1 tsp ground ginger

  • 1 tsp garlic powder

  • 1 tbsp olive oil

  • Salt and pepper to taste

  • Optional: Chopped cilantro for garnish


Instructions

  1. Cook the Chicken: In a large pan, heat olive oil over medium-high heat. Season the chicken breasts with salt, pepper, garlic powder, and ground ginger. Brown the chicken on both sides until cooked through (about 6-7 minutes per side). Remove from the pan and set aside.

  2. Sauté the Aromatics: In the same pan, add diced onion and garlic. Sauté for 2-3 minutes until softened and fragrant.

  3. Add Rice and Pineapple: Stir in the rice, followed by the pineapple (including juice if using canned). Add soy sauce, honey, and a pinch of salt and pepper. Stir everything together to combine.

  4. Cook the Rice: Pour in 2 cups of water (or chicken broth for extra flavor). Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.

  5. Combine Chicken and Rice: Slice the cooked chicken breasts and arrange them over the rice mixture. Cover and let it cook for an additional 5-10 minutes until everything is heated through.
