Ingredients

  • 1.5 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1.5 cups long-grain white rice
  • 2 cups fresh pineapple chunks
  • 2 medium bell peppers (mixed colors), diced
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 1/4 cup soy sauce
  • 3 tablespoons brown sugar
  • 2 tablespoons rice vinegar
  • 2.5 cups chicken broth
  • 3 tablespoons vegetable oil
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons cornstarch
  • 3 stalks green onions, sliced
  • Salt and black pepper to taste

Instructions

  1. 1. Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then sear for 3-4 minutes per side until golden brown. Remove and set aside.
  2. 2. Add remaining oil to the pan. Sauté onions and bell peppers for 5 minutes until softened.
  3. 3. Add garlic and ginger, cooking for 30 seconds until fragrant.
  4. 4. Stir in soy sauce, brown sugar, and rice vinegar until sugar dissolves.
  5. 5. Add rice and toast for 2 minutes, stirring constantly.
  6. 6. Pour in chicken broth and bring to a boil.
  7. 7. Return chicken to pan and add pineapple chunks. Reduce heat to low.
  8. 8. Cover tightly and simmer for 18-20 minutes without lifting lid.
  9. 9. Remove from heat and let rest covered for 5 minutes.
  10. 10. Fluff with fork, garnish with green onions, and serve immediately.

Notes

Store leftovers in airtight containers for up to 4 days in the refrigerator. Freezes well for up to 3 months. Reheat with a splash of broth or water to restore moisture. Serve with cucumber salad or steamed vegetables for a complete meal.
