- 1.5 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
- 1.5 cups long-grain white rice
- 2 cups fresh pineapple chunks
- 2 medium bell peppers (mixed colors), diced
- 1 large yellow onion, diced
- 4 cloves garlic, minced
- 1/4 cup soy sauce
- 3 tablespoons brown sugar
- 2 tablespoons rice vinegar
- 2.5 cups chicken broth
- 3 tablespoons vegetable oil
- 1 tablespoon fresh ginger, minced
- 2 tablespoons cornstarch
- 3 stalks green onions, sliced
- Salt and black pepper to taste
Instructions
- 1. Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then sear for 3-4 minutes per side until golden brown. Remove and set aside.
- 2. Add remaining oil to the pan. Sauté onions and bell peppers for 5 minutes until softened.
- 3. Add garlic and ginger, cooking for 30 seconds until fragrant.
- 4. Stir in soy sauce, brown sugar, and rice vinegar until sugar dissolves.
- 5. Add rice and toast for 2 minutes, stirring constantly.
- 6. Pour in chicken broth and bring to a boil.
- 7. Return chicken to pan and add pineapple chunks. Reduce heat to low.
- 8. Cover tightly and simmer for 18-20 minutes without lifting lid.
- 9. Remove from heat and let rest covered for 5 minutes.
- 10. Fluff with fork, garnish with green onions, and serve immediately.
Notes
Store leftovers in airtight containers for up to 4 days in the refrigerator. Freezes well for up to 3 months. Reheat with a splash of broth or water to restore moisture. Serve with cucumber salad or steamed vegetables for a complete meal.
