  • 810 oz oysters (fresh or canned, chopped)

  • 8 oz cream cheese, softened

  • ½ cup grated Parmesan cheese

  • 2 tbsp butter, melted

  • 1 cup chopped spinach, drained

  • 2 cloves garlic, minced

  • ¼ cup finely chopped onion

  • 1 tbsp lemon juice

  • ½ tsp black pepper

  • ¼ cup breadcrumbs (optional, for topping)


Instructions

  • Preheat oven to 375°F (190°C).

  • Chop oysters finely and drain excess liquid.

  • In a bowl, mix softened cream cheese with melted butter until smooth.

  • Stir in Parmesan, garlic, onion, lemon juice, and black pepper.

  • Gently fold in oysters and spinach until combined.

  • Transfer mixture to a lightly greased baking dish.

  • Sprinkle breadcrumbs on top if using.

  • Bake 20–25 minutes until hot and bubbly. Broil 1–2 minutes for a golden top if desired.

  • Let rest 5 minutes, then serve warm with crackers, bread, or vegetables.

Notes

Use well-drained oysters to prevent a watery dip.

For extra flavor, sprinkle a little extra Parmesan on top before broiling.

Make ahead by preparing the dip a day in advance; bake just before serving.

For a lighter version, substitute part of the cream cheese with Greek yogurt or cottage cheese.
