Ingredients

  • 2 tablespoons butter or olive oil

  • 1 lb (450 g) chicken breast, cut into bite-sized pieces

  • 1 cup long-grain white rice

  • 2 ½ cups chicken broth

  • 2 cups fresh or frozen broccoli florets

  • 1 medium onion, diced

  • 2 garlic cloves, minced

  • 1 teaspoon paprika

  • ½ teaspoon black pepper

  • ½ teaspoon salt (adjust to taste)

  • 1 cup shredded cheddar cheese (or part-skim)

  • Optional: ¼ cup Greek yogurt for extra creaminess


Instructions

  • Preheat a large pot over medium heat. Melt butter and sauté chicken until lightly browned.

  • Add onion and garlic; cook 2–3 minutes.

  • Stir in rice, chicken broth, paprika, salt, and pepper. Bring to a simmer.

  • Cover and cook on low heat for 15–20 minutes until rice is tender.

  • Add broccoli and cook 5–7 minutes more until tender.

  • Stir in shredded cheese and optional Greek yogurt until creamy. Serve warm.
