  • 1.5 lbs baby potatoes, halved
  • 2 medium bell peppers, cut into chunks

  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. 1. Preheat your oven to 400 degrees Fahrenheit and line a large sheet pan with parchment paper or lightly grease it.
  2. 2. Place halved baby potatoes on the sheet pan and drizzle with 2 tablespoons of olive oil.
  3. 3. Sprinkle garlic powder, paprika, Italian seasoning, salt, and pepper over the potatoes and toss to coat evenly.
  4. 4. Arrange potatoes cut-side down on the pan for maximum crispiness.
  5. 5. Add sliced kielbasa, bell pepper chunks, and onion slices to the pan, drizzling with remaining olive oil.

Notes
