- 1.5 lbs baby potatoes, halved
- 2 medium bell peppers, cut into chunks

- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- 1. Preheat your oven to 400 degrees Fahrenheit and line a large sheet pan with parchment paper or lightly grease it.
- 2. Place halved baby potatoes on the sheet pan and drizzle with 2 tablespoons of olive oil.
- 3. Sprinkle garlic powder, paprika, Italian seasoning, salt, and pepper over the potatoes and toss to coat evenly.
- 4. Arrange potatoes cut-side down on the pan for maximum crispiness.
- 5. Add sliced kielbasa, bell pepper chunks, and onion slices to the pan, drizzling with remaining olive oil.
- 6. Toss everything together gently to distribute seasonings evenly across all ingredients.
- 7. Roast in the preheated oven for 25-30 minutes, stirring once halfway through cooking.
- 8. Check that potatoes are fork-tender and everything has developed a golden brown color.
- 9. Remove from oven, garnish with fresh chopped parsley, and serve hot.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven at 375°F for best texture. This recipe is easily doubled for larger gatherings.
