Description

A refreshing, crisp, and zesty Mediterranean cucumber salad with cucumbers, tomatoes, red onions, fresh herbs, and a light olive oil–lemon dressing. Perfect for lunch, a side dish, or meal prep. Healthy, flavorful, and ready in minutes!


Ingredients

  • 2 large cucumbers, thinly sliced

  • 2 cups cherry or grape tomatoes, halved

  • 1/2 red onion, thinly sliced

  • 1/4 cup fresh parsley, chopped (or mint/dill)

  • 3 tbsp extra virgin olive oil

  • 2 tbsp fresh lemon juice

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • Optional: 1/4 cup crumbled feta cheese or Kalamata olives


Instructions

  1. Wash and slice cucumbers, halve tomatoes, and thinly slice red onion. Chop herbs.

  2. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper to make the dressing.

  3. In a large bowl, combine cucumbers, tomatoes, red onion, and herbs.

  4. Drizzle dressing over salad and toss gently until everything is evenly coated.

  5. Optional: Add feta cheese or olives on top before serving.

Notes

For extra crisp cucumbers, sprinkle lightly with salt and let them sit for 10 minutes, then pat dry.

Add dressing just before serving to prevent sogginess.

For a creamy twist, mix in 2 tablespoons of Greek yogurt with the dressing.
