Ingredients
2 ¼ cups all-purpose flour
¾ cup unsalted butter, softened
¾ cup granulated sugar
1 large egg
1 tablespoon lemon zest
1 tablespoon fresh lemon juice
1 teaspoon vanilla extract
1 teaspoon baking powder
1 to 2 teaspoons culinary lavender, finely ground
¼ teaspoon salt
Instructions
Preheat the oven to 350°F and line a baking sheet with parchment paper.
In a mixing bowl, cream the butter and sugar together until light and fluffy.
Add the egg, vanilla extract, lemon zest, and lemon juice, mixing until smooth.
In a separate bowl, whisk together flour, baking powder, salt, and ground lavender.
Gradually mix the dry ingredients into the wet ingredients until just combined.
Scoop the dough onto the prepared baking sheet, leaving space between each cookie.
Bake for 10–12 minutes, until the edges are set and lightly golden.
Let the cookies cool on the baking sheet for a few minutes, then transfer to a rack to cool completely.
Notes
Use culinary-grade lavender only, and grind it finely so the flavor distributes evenly.
Do not overmix the dough once the flour is added, as this keeps the cookies soft.
For extra lemon flavor, sprinkle a little lemon sugar over the dough before baking.
If you prefer a sweeter finish, drizzle the cooled cookies with a light lemon glaze.
