- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup whole milk
- 3 tablespoons fresh lemon juice
- 2 tablespoons lemon zest
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh blueberries
- 1 cup powdered sugar
- 2 tablespoons lemon juice
Instructions
- 1. Preheat oven to 350 degrees Fahrenheit and grease a 9×5-inch loaf pan with butter or non-stick spray, then dust with flour.
- 2. In a large bowl, whisk together flour, sugar, baking powder, and salt until well combined.
- 3. In a separate bowl, whisk together melted butter, eggs, milk, lemon juice, lemon zest, and vanilla extract until smooth.
- 4. Pour wet ingredients into dry ingredients and fold gently with a rubber spatula just until combined, leaving some small lumps.
- 5. Toss blueberries with 1 tablespoon of flour, then gently fold them into the batter, reserving a few for topping.
- 6. Pour batter into prepared pan, smooth the top, and press reserved blueberries on top.
- 7. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean and the top is golden brown.
- 8. Cool in pan for 15 minutes, then transfer to a wire rack to cool completely.
- 9. Whisk together powdered sugar and lemon juice until smooth, then drizzle over cooled bread.
- 10. Allow glaze to set for 20 minutes before slicing and serving.
Notes
Store wrapped tightly at room temperature for 3 days or refrigerate for up to 1 week. Can be frozen for up to 3 months. For best results, use fresh blueberries and zest lemons just before using.
