Ingredients

Scale

For the Beef:

  • 1 lb ground beef (80/20)

  • 1/4 cup soy sauce (low-sodium optional)

  • 2 tbsp brown sugar

  • 3 cloves garlic, minced

  • 1 tsp fresh ginger, grated

  • 1 tbsp sesame oil

  • 2 sliced green onions

  • Optional: 1 tbsp gochujang for spice

For the Rice & Vegetables:

  • 2 cups cooked rice (white, jasmine, or brown)

  • 1 cup thinly sliced carrots, cucumber, or bell peppers

  • Optional: steamed broccoli, zucchini, or spinach

  • Garnish: sesame seeds, fried egg (optional)

Instructions

  • Cook the Beef: Heat a skillet over medium-high heat. Brown the ground beef, breaking it into small pieces. Drain excess fat if needed.

  • Add Aromatics & Sauce: Stir in garlic and ginger, cook 1–2 minutes. Add soy sauce, brown sugar, and optional gochujang. Mix well until beef is coated and sauce slightly thickens.

  • Add Green Onions & Sesame Oil: Stir in green onions and sesame oil. Toss well and remove from heat.

  • Prepare Rice & Vegetables: Cook rice according to instructions. Thinly slice or lightly sauté vegetables.

  • Assemble Bowls: Layer rice in bowls, add vegetables, and top with the cooked beef. Garnish with sesame seeds and optional fried egg.

  • Serve & Enjoy: Serve immediately or portion for meal prep.

Notes

Meal Prep Friendly: Store beef, rice, and vegetables separately in airtight containers for up to 4 days.

Spice Level: Adjust gochujang or add chili flakes for your preferred heat.

Low-Carb Option: Swap rice for cauliflower rice or spiralized zucchini noodles.

Extra Flavor: Toast sesame seeds before sprinkling for a nutty aroma.
