This Juicy French Onion Pot Roast is perfect for a hearty, comforting fall dinner. Tender beef, caramelized onions, and rich broth come together for an unforgettable meal.
Ingredients
3–4 lb beef chuck roast
2–3 yellow onions, thinly sliced
2 cups beef broth
1 packet French onion soup mix (optional)
1 tbsp fresh thyme
2–3 bay leaves
2 tbsp olive oil
2 tbsp butter
Salt and pepper to taste
Instructions
Season roast with salt and pepper.
Sear roast in a large Dutch oven with olive oil on medium-high heat until browned on all sides.
Remove roast and set aside.
In the same pot, sauté onions in butter until caramelized.
Add beef broth, soup mix, thyme, and bay leaves to the pot. Stir to combine.
Return the roast to the pot, cover, and cook in a preheated 300°F oven for 3-4 hours or until tender.
Serve with mashed potatoes and French onion toast.
