This Juicy French Onion Pot Roast is perfect for a hearty, comforting fall dinner. Tender beef, caramelized onions, and rich broth come together for an unforgettable meal.


Ingredients

  • 34 lb beef chuck roast

  • 23 yellow onions, thinly sliced

  • 2 cups beef broth

  • 1 packet French onion soup mix (optional)

  • 1 tbsp fresh thyme

  • 23 bay leaves

  • 2 tbsp olive oil

  • 2 tbsp butter

  • Salt and pepper to taste


Instructions

  • Season roast with salt and pepper.

  • Sear roast in a large Dutch oven with olive oil on medium-high heat until browned on all sides.

  • Remove roast and set aside.

  • In the same pot, sauté onions in butter until caramelized.

  • Add beef broth, soup mix, thyme, and bay leaves to the pot. Stir to combine.

  • Return the roast to the pot, cover, and cook in a preheated 300°F oven for 3-4 hours or until tender.

  • Serve with mashed potatoes and French onion toast.
