Ingredients
2 slices whole-grain or multigrain bread
3–4 slices turkey breast (deli or leftover roasted turkey)
1/2 avocado, mashed or sliced
1 tsp honey mustard (or more to taste)
1 slice cheddar or Swiss cheese (optional)
1/4 cup baby spinach or arugula
Optional: cucumber or bell pepper slices
Salt and pepper to taste
Lemon juice (for avocado)
Instructions
Prepare all ingredients: slice avocado, wash greens, and toast bread lightly if desired.
Spread mashed avocado on one slice of bread or layer sliced avocado.
Add turkey slices evenly over the avocado.
Place cheese on top if using.
Add greens and optional crunchy veggies.
Drizzle honey mustard lightly over the layers.
Top with the second slice of bread and slice diagonally.
Serve with fresh sides like salad, fruit, or baked sweet potato fries.
Notes
Add avocado just before eating to prevent browning.
