Ingredients
4 boneless, skinless chicken breasts
4 oz Brie cheese, chopped
1/2 cup cranberries, fresh or dried
1 tbsp fresh thyme, chopped
2 cloves garlic, minced
2 tbsp olive oil or butter
Salt and pepper to taste
Instructions
Preheat the oven to 375°F (190°C).
Cut a pocket into each chicken breast.
Mix Brie, cranberries, thyme, and garlic in a bowl.
Stuff the chicken breasts with the filling and secure with toothpicks.
Sear the chicken in a hot skillet with olive oil for 3-4 minutes on each side.
Transfer to the oven and bake for 20-25 minutes until the chicken reaches 165°F (75°C).
Let rest for 5 minutes, remove toothpicks, and serve.
