Ingredients

  • 4 boneless, skinless chicken breasts

  • 4 oz Brie cheese, chopped

  • 1/2 cup cranberries, fresh or dried

  • 1 tbsp fresh thyme, chopped

  • 2 cloves garlic, minced

  • 2 tbsp olive oil or butter

  • Salt and pepper to taste


Instructions

  • Preheat the oven to 375°F (190°C).

  • Cut a pocket into each chicken breast.

  • Mix Brie, cranberries, thyme, and garlic in a bowl.

  • Stuff the chicken breasts with the filling and secure with toothpicks.

  • Sear the chicken in a hot skillet with olive oil for 3-4 minutes on each side.

  • Transfer to the oven and bake for 20-25 minutes until the chicken reaches 165°F (75°C).

  • Let rest for 5 minutes, remove toothpicks, and serve.
