A delicious one-pan tropical dinner featuring tender chicken, sweet pineapple, colorful bell peppers, and a sticky-sweet Hawaiian glaze that caramelizes beautifully in the oven.

- 2 pounds boneless, skinless chicken thighs
- 2 cups fresh pineapple chunks
- 1 large red bell pepper, cut into chunks
- 1 large green bell pepper, cut into chunks
- 1 medium red onion, cut into wedges
- 1/3 cup soy sauce
- 1/4 cup ketchup
- 1/4 cup brown sugar, packed
- 2 tablespoons rice vinegar
- 1 tablespoon fresh ginger, minced
- 3 garlic cloves, minced
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 2 green onions, sliced (for garnish)
- 1 tablespoon sesame seeds (for garnish)
Instructions
- 1. Preheat oven to 425°F (220°C) and line a large rimmed baking sheet with parchment paper or foil.
- 2. In a medium bowl, whisk together soy sauce, ketchup, brown sugar, rice vinegar, ginger, garlic, sesame oil, and cornstarch until smooth and well combined.
- 3. Season chicken thighs with salt and pepper, then place them on the prepared sheet pan.
- 4. Arrange pineapple chunks, bell peppers, and onion wedges around the chicken pieces in a single layer.
- 5. Drizzle olive oil over everything, then pour two-thirds of the glaze over the chicken and vegetables. Toss to coat evenly.
- 6. Spread everything back into a single layer, ensuring pieces aren’t overcrowded.
- 7. Roast for 25 to 30 minutes, stirring halfway through and brushing with remaining glaze.
- 8. Check that chicken reaches an internal temperature of 165°F and vegetables are tender with caramelized edges.
- 9. Remove from oven, garnish with sliced green onions and sesame seeds, and serve immediately over rice.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven at 350°F for best results. This dish freezes well for up to 3 months. Serve over jasmine rice, coconut rice, or cauliflower rice for a complete meal.
