Description

A delicious one-pan tropical dinner featuring tender chicken, sweet pineapple, colorful bell peppers, and a sticky-sweet Hawaiian glaze that caramelizes beautifully in the oven.


Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 2 cups fresh pineapple chunks
  • 1 large red bell pepper, cut into chunks
  • 1 large green bell pepper, cut into chunks
  • 1 medium red onion, cut into wedges
  • 1/3 cup soy sauce
  • 1/4 cup ketchup
  • 1/4 cup brown sugar, packed
  • 2 tablespoons rice vinegar
  • 1 tablespoon fresh ginger, minced
  • 3 garlic cloves, minced
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 2 green onions, sliced (for garnish)
  • 1 tablespoon sesame seeds (for garnish)

Instructions

  1. 1. Preheat oven to 425°F (220°C) and line a large rimmed baking sheet with parchment paper or foil.
  2. 2. In a medium bowl, whisk together soy sauce, ketchup, brown sugar, rice vinegar, ginger, garlic, sesame oil, and cornstarch until smooth and well combined.
  3. 3. Season chicken thighs with salt and pepper, then place them on the prepared sheet pan.
  4. 4. Arrange pineapple chunks, bell peppers, and onion wedges around the chicken pieces in a single layer.
  5. 5. Drizzle olive oil over everything, then pour two-thirds of the glaze over the chicken and vegetables. Toss to coat evenly.
  6. 6. Spread everything back into a single layer, ensuring pieces aren’t overcrowded.
  7. 7. Roast for 25 to 30 minutes, stirring halfway through and brushing with remaining glaze.
  8. 8. Check that chicken reaches an internal temperature of 165°F and vegetables are tender with caramelized edges.
  9. 9. Remove from oven, garnish with sliced green onions and sesame seeds, and serve immediately over rice.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven at 350°F for best results. This dish freezes well for up to 3 months. Serve over jasmine rice, coconut rice, or cauliflower rice for a complete meal.
