- 3 cups medium zucchini, diced

- 1 large red bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 2 teaspoons Italian seasoning
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ cup fresh basil, chopped
- ½ cup Parmesan cheese, grated
Instructions
- 1. Heat olive oil in a large skillet over medium-high heat until shimmering.
- 2. Add diced onion and cook for 3 minutes until translucent, then add garlic and cook for 30 seconds.
- 3. Add ground turkey, breaking it into pieces, and cook for 5-7 minutes until golden brown.
- 4. Add diced bell pepper and zucchini, stirring to combine thoroughly.
- 5. Season with Italian seasoning, paprika, cumin, salt, and black pepper, mixing well.
- 6. Pour in canned tomatoes with juices and stir to incorporate.
- 7. Reduce heat to medium and simmer for 10-12 minutes until zucchini is tender.
- 8. Stir in fresh basil and sprinkle with Parmesan cheese before serving.
Notes
Store leftovers in airtight containers in the refrigerator for 3-4 days. Freezes well for up to 3 months. Serve over cauliflower rice, quinoa, or enjoy as-is for a low-carb meal. Add red pepper flakes for extra heat.
