Ingredients
8 oz cream cheese, softened
1/2 cup granulated sugar
1 large egg
1 tsp vanilla extract
2 tbsp sour cream (optional)
1 cup graham cracker crumbs
4 tbsp butter, melted
Green food coloring (few drops)
Red candies or sprinkles for decoration
Mini chocolate chips (optional, for eyes)
Instructions
Preheat oven to 325°F (163°C) and line a 12-cup muffin tin with paper liners.
Mix graham cracker crumbs and melted butter. Press 1 tbsp of mixture into each muffin cup. Bake 5-7 minutes, then cool.
Beat cream cheese until smooth, add sugar, then egg, vanilla, and sour cream. Mix until creamy. Add green food coloring.
Spoon cheesecake filling into muffin cups, about 3/4 full. Tap tin to remove air bubbles.
Bake 18-22 minutes. Centers should be slightly jiggly. Cool 30 minutes, then refrigerate 2 hours.
Decorate with whipped cream, red candies, or chocolate chips to create Grinch faces or holiday accents.
