Ingredients
2 cups elbow macaroni (or cavatappi)
2 tbsp butter
2 tbsp flour
2 cups whole milk
1 cup cream (optional for richness)
2 cups shredded Gouda cheese (young or smoked)
1 cup sharp cheddar cheese
Salt, pepper, paprika to taste
1/2 cup breadcrumbs (for baked version)
Instructions
Cook pasta according to package directions. Drain.
In a saucepan, melt butter. Whisk in flour to make a roux.
Slowly add milk and cream, whisking until smooth.
Add cheeses a handful at a time until melted into a creamy sauce.
Season with salt, pepper, and paprika.
Stir pasta into sauce.
For baked version: pour into casserole, top with breadcrumbs + cheese, bake at 375°F for 20 minutes until golden.
