Description

This Garlic Parmesan Chicken Meatloaf combines lean ground chicken with fresh garlic, Parmesan cheese, Italian herbs, and a cheesy, golden crust. It’s juicy, comforting, and easy to make for weeknight dinners or family meals.


Ingredients

  • 1.5 lb ground chicken (93% lean)

  • ½ cup freshly grated Parmesan cheese

  • ½ cup breadcrumbs (Italian or plain)

  • 1 large egg

  • 34 cloves garlic, minced

  • ¼ cup milk

  • 1 tsp Italian seasoning

  • 1 tsp onion powder (optional)

  • 2 tbsp fresh parsley, chopped

  • ½ tsp salt

  • ¼ tsp freshly ground black pepper

  • ½ cup shredded mozzarella (optional, for cheesy center)

  • For the Topping / Glaze:

    • ¼½ cup Parmesan cheese

    • 2 tbsp melted butter (or mayonnaise)

    • 12 garlic cloves, minced

    • 1 tbsp fresh parsley, chopped (optional)


Instructions

  • Preheat oven to 375°F (190°C). Grease a loaf pan or line a baking sheet.

  • In a large bowl, gently mix ground chicken, breadcrumbs, Parmesan, garlic, egg, milk, Italian seasoning, onion powder (if using), parsley, salt, and pepper until just combined. Don’t overmix.

  • (Optional) Fold in shredded mozzarella for a cheesy center.

  • Shape mixture into a loaf in your prepared pan.

  • Combine topping ingredients (Parmesan, butter or mayo, garlic, parsley) and spread evenly on top of the loaf.

  • Bake for 45–55 minutes, or until the internal temperature reaches 165°F (74°C).

  • (Optional) For a crispier, golden crust, broil for 2–3 minutes at the end, watching carefully.

  • Remove from oven and let rest for 8–10 minutes before slicing.

Notes

Use a meat thermometer to ensure perfect doneness.

Mix gently to keep the loaf tender.

Leftovers are great for sandwiches or meal prep.

For a low-carb version, substitute almond flour for breadcrumbs.
