The Fresh Grinder Tortellini Salad is a vibrant, creamy pasta salad inspired by the bold flavors of classic grinder sandwiches. Packed with cheese-filled tortellini, crisp vegetables, and a tangy, creamy dressing, this salad is perfect for lunch, picnics, potlucks, or meal prep. It’s flavorful, filling, and incredibly easy to make.


Ingredients

  • 12 oz fresh cheese tortellini

  • 1 cup cherry tomatoes, halved

  • 1 cup bell peppers, thinly sliced

  • 1 cup cucumber, diced

  • 1 cup shredded lettuce (Romaine or iceberg)

  • 1/2 cup red onion, thinly sliced

  • 1/2 cup mayonnaise or Greek yogurt

  • 2 tbsp apple cider or pomegranate juice

  • 1 tsp Dijon mustard

  • 1 clove garlic, minced

  • 1 tsp Italian seasoning

  • Salt & pepper, to taste

  • 1 tsp honey (optional)

  • Optional protein: grilled chicken, turkey ham, chickpeas


Instructions

  • Cook the tortellini according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Toss lightly with a drizzle of olive oil.

  • In a medium bowl, whisk together mayonnaise (or Greek yogurt), apple cider or pomegranate juice, Dijon mustard, garlic, Italian seasoning, honey, salt, and pepper until creamy.

  • Combine tortellini, cherry tomatoes, bell peppers, cucumber, shredded lettuce, and red onion in a large bowl.

  • Pour the dressing over the salad and gently toss to coat evenly. Be careful not to break the tortellini.

  • Add optional protein if desired. Chill for at least 30 minutes before serving to let flavors meld.

  • Serve as a main dish for lunch, a side for dinner, or portion for meal prep.

Notes

Keep dressing separate if storing for more than a few hours to prevent soggy vegetables.

Add fresh herbs like parsley or basil for extra aroma and flavor.

For a little crunch, top with sliced pepperoncini, roasted red peppers, or toasted nuts just before serving.
