  • 4 ears of fresh corn, husked

  • 6 slices of turkey bacon

  • 2 tablespoons butter or dairy-free alternative

  • 1/4 cup chopped fresh herbs (parsley, cilantro, or thyme)

  • Salt and pepper to taste

  • Optional: 1/4 cup sour cream or cream cheese for extra creaminess


Instructions

  • Cook the Corn:
    Boil the corn in a large pot of water for 5–7 minutes, or until the kernels are tender but still firm. Alternatively, grill the corn for 10–15 minutes, turning occasionally, for a smoky flavor. Once cooked, slice the kernels off the cob and set aside.

  • Cook the Turkey Bacon:
    In a skillet, cook the turkey bacon over medium heat until crispy, about 6–8 minutes per side. Once cooked, crumble the bacon into bite-sized pieces.

  • Combine the Ingredients:
    In a large pan, melt the butter over medium heat. Add the cooked corn and crumbled bacon to the pan and stir to combine.

  • Add Fresh Herbs:
    Sprinkle the chopped fresh herbs over the corn and bacon mixture. Stir well to incorporate.

  • Creamy Option (Optional):
    If you prefer a creamy dish, add sour cream or cream cheese to the pan and stir until melted and evenly distributed.
