  • 1 1/2 cups orzo pasta

  • 2 cups caramelized onions (about 2 large onions)

  • 1 1/2 cups shredded cheese (Gruyère, mozzarella, or cheddar)

  • 2 cups chicken broth

  • 1/2 cup heavy cream

  • 2 tablespoons butter

  • 1 tablespoon olive oil

  • 2 cloves garlic, minced

  • 1 teaspoon fresh thyme (optional)

  • Salt and pepper, to taste

  • Optional vegetables: mushrooms, spinach, or roasted red peppers


Instructions

  • Preheat Oven: Preheat your oven to 375°F (190°C).

  • Cook Orzo: Boil orzo in salted water until just al dente. Drain and set aside.

  • Caramelize Onions: In a skillet, heat butter and olive oil over medium heat. Add sliced onions and cook slowly until golden and caramelized (about 15–20 minutes). Add minced garlic in the last 2 minutes.

  • Combine Ingredients: In a large casserole dish, layer the caramelized onions first, then add shredded chicken, cooked orzo, and optional vegetables.

  • Add Sauce: Pour chicken broth and cream over the mixture. Season with salt, pepper, and fresh thyme if using.

  • Top with Cheese: Sprinkle shredded cheese evenly on top of the casserole.

  • Bake Covered: Cover the dish with foil and bake for 20 minutes.

  • Bake Uncovered: Remove foil and bake an additional 15–20 minutes until the cheese is melted and golden brown.

  • Rest and Serve: Let the casserole rest for 5 minutes before serving to allow flavors to meld
