Ingredients
2 cups cooked chicken, shredded (rotisserie or poached)
1 1/2 cups orzo pasta
2 cups caramelized onions (about 2 large onions)
1 1/2 cups shredded cheese (Gruyère, mozzarella, or cheddar)
2 cups chicken broth
1/2 cup heavy cream
2 tablespoons butter
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon fresh thyme (optional)
Salt and pepper, to taste
Optional vegetables: mushrooms, spinach, or roasted red peppers
Instructions
Preheat Oven: Preheat your oven to 375°F (190°C).
Cook Orzo: Boil orzo in salted water until just al dente. Drain and set aside.
Caramelize Onions: In a skillet, heat butter and olive oil over medium heat. Add sliced onions and cook slowly until golden and caramelized (about 15–20 minutes). Add minced garlic in the last 2 minutes.
Combine Ingredients: In a large casserole dish, layer the caramelized onions first, then add shredded chicken, cooked orzo, and optional vegetables.
Add Sauce: Pour chicken broth and cream over the mixture. Season with salt, pepper, and fresh thyme if using.
Top with Cheese: Sprinkle shredded cheese evenly on top of the casserole.
Bake Covered: Cover the dish with foil and bake for 20 minutes.
Bake Uncovered: Remove foil and bake an additional 15–20 minutes until the cheese is melted and golden brown.
Rest and Serve: Let the casserole rest for 5 minutes before serving to allow flavors to meld
