Ingredients

  • 4 cups mixed greens (romaine, baby spinach, or spring mix)

  • 1 ½ cups strawberries, hulled and sliced

  • ½ cup cucumber, sliced (optional)

  • ½ cup cherry tomatoes (optional)

  • ¼ cup radishes, thinly sliced (optional)

  • ½ cup toasted almonds, pecans, or walnuts

  • ½ cup crumbled feta or goat cheese

  • 1 cup grilled chicken, turkey bacon, or chickpeas (optional protein)

  • 3 tbsp olive oil or avocado oil

  • 2 tbsp apple cider vinegar or sparkling grape juice

  • 1 tsp Dijon mustard

  • 1 tsp honey

  • 1 tbsp fresh lemon juice

  • Salt & pepper to taste


Instructions

  • Wash and dry the greens thoroughly.

  • Slice strawberries and optional veggies just before assembling.

  • Toast nuts lightly in a skillet until fragrant.

  • Prepare dressing: Combine olive oil, vinegar, mustard, honey, lemon juice, salt, and pepper in a jar and shake well.

  • In a large bowl, combine greens, strawberries, optional veggies, nuts, and cheese.

  • Drizzle dressing over salad and toss gently.

  • Add protein if desired and serve immediately.

Notes

Prep ahead: Wash greens, toast nuts, and cook protein in advance, but add strawberries and dressing just before serving.
