Ingredients
4 cups mixed greens (romaine, baby spinach, or spring mix)
1 ½ cups strawberries, hulled and sliced
½ cup cucumber, sliced (optional)
½ cup cherry tomatoes (optional)
¼ cup radishes, thinly sliced (optional)
½ cup toasted almonds, pecans, or walnuts
½ cup crumbled feta or goat cheese
1 cup grilled chicken, turkey bacon, or chickpeas (optional protein)
3 tbsp olive oil or avocado oil
2 tbsp apple cider vinegar or sparkling grape juice
1 tsp Dijon mustard
1 tsp honey
1 tbsp fresh lemon juice
Salt & pepper to taste
Instructions
Wash and dry the greens thoroughly.
Slice strawberries and optional veggies just before assembling.
Toast nuts lightly in a skillet until fragrant.
Prepare dressing: Combine olive oil, vinegar, mustard, honey, lemon juice, salt, and pepper in a jar and shake well.
In a large bowl, combine greens, strawberries, optional veggies, nuts, and cheese.
Drizzle dressing over salad and toss gently.
Add protein if desired and serve immediately.

Prep ahead: Wash greens, toast nuts, and cook protein in advance, but add strawberries and dressing just before serving.
