A hearty, protein-packed breakfast that’s perfect for busy mornings or weekend brunches. This easy egg sausage casserole combines fluffy eggs, savory chicken or turkey sausage, fresh vegetables, and melted cheese for a comforting, flavorful dish the whole family will love.
Ingredients
8 large eggs
1 cup milk (or almond/ oat milk)
1 pound chicken, turkey, or beef sausage, cooked and sliced
1 cup bell peppers, diced
1 medium onion, diced
1–1.5 cups shredded cheese (cheddar, gouda, or a mix)
1–2 tbsp olive oil or butter
Salt and pepper, to taste
Optional add-ins: spinach, zucchini, mushrooms, herbs (parsley, chives, thyme)
Instructions
Preheat oven to 350°F (175°C) and grease a baking dish.
Cook sausage in a skillet until browned. Sauté vegetables in olive oil or butter until tender.
In a large bowl, whisk eggs and milk until smooth. Season with salt and pepper.
Fold in cooked sausage, vegetables, and half of the cheese.
Pour mixture into the prepared baking dish. Top with remaining cheese.
Bake for 35–40 minutes, or until a knife inserted in the center comes out clean.
Let cool for 5–10 minutes, then slice and serve.
Notes
Assemble the casserole the night before for a quick morning bake.
Experiment with different cheeses or vegetables to customize flavor.
Cover with foil for the first 20 minutes of baking to lock in moisture, then uncover to brown the top.
