Easy Blueberry Pie Bars

Description

Delicious blueberry bars with a buttery crust, sweet blueberry filling, and crumbly topping. All the flavor of blueberry pie in an easy-to-serve bar form.


Ingredients

  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup cold butter, cubed
  • 1 large egg
  • 4 cups fresh or frozen blueberries
  • 3 tablespoons cornstarch
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1/2 cup additional sugar for filling
  • 1 teaspoon vanilla extract

Instructions

  1. 1. Preheat oven to 375°F and line a 9×13-inch baking pan with parchment paper, leaving overhang on sides.
  2. 2. Combine flour, 1 cup sugar, baking powder, and salt in a large bowl. Cut in cold butter until mixture resembles coarse crumbs. Add egg and mix until combined.
  3. 3. Reserve one-third of crumb mixture for topping. Press remaining mixture firmly into bottom of prepared pan.
  4. 4. Bake crust for 12 minutes until edges begin to turn golden. Remove from oven.
  5. 5. Meanwhile, combine blueberries, 1/2 cup sugar, cornstarch, lemon juice, lemon zest, and vanilla extract in a bowl. Mix well to coat berries.
  6. 6. Spread blueberry mixture evenly over partially baked crust.
  7. 7. Sprinkle reserved crumb mixture evenly over blueberry filling.
  8. 8. Bake for 35-40 minutes until topping is golden brown and filling bubbles around edges.
  9. 9. Cool completely on wire rack for at least 2 hours, or refrigerate for 1 hour before cutting.
  10. 10. Use parchment overhang to lift bars from pan, then cut into squares with a sharp knife.

Notes

Store bars in an airtight container in the refrigerator for up to 5 days. Bars can be frozen for up to 3 months when wrapped individually in plastic wrap. No need to thaw frozen blueberries before using. Serve plain or with whipped cream or vanilla ice cream.
