Ingredients
For the Cake:
2 1/2 cups cake flour
1 1/2 cups granulated sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1 cup buttermilk
1 cup vegetable oil
2 large eggs
1 1/2 tsp vanilla extract
2 tbsp pink food coloring
For the Frosting:
1 cup unsalted butter, softened
8 oz cream cheese, softened
4 cups powdered sugar
1 tsp vanilla extract
2 tbsp heavy cream (if needed)
Instructions
Preheat Oven & Prepare Pans
Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.Make the Cake Batter
In a large bowl, whisk together the cake flour, baking powder, baking soda, and salt. In a separate bowl, mix the oil, sugar, eggs, buttermilk, and vanilla extract. Add the dry ingredients to the wet ingredients, stirring until just combined. Add in the pink food coloring and mix to achieve the desired shade.Bake the Cake
Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.Make the Frosting
Beat the butter and cream cheese together until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until light and fluffy. If the frosting is too thick, add heavy cream to reach your desired consistency.Assemble the Cake
Place one cake layer on a cake stand. Spread a layer of frosting over the top. Place the second cake layer on top and frost the entire cake. Smooth the frosting with a spatula, and decorate with optional toppings like fresh berries or sprinkles.Serve & Enjoy
Serve at room temperature and enjoy the sweet, velvety goodness of your Pink Velvet Cake!
Notes
For a richer frosting, use a cream cheese buttercream instead of just butter and cream cheese.
If you prefer a stronger pink hue, you can add a little extra pink food coloring until you achieve your desired color.
