Ingredients

2–4 large eggs
¼–½ cup crumbled feta cheese
1–2 tbsp olive oil or butter
Salt, to taste
Black pepper, to taste
Fresh herbs (optional, for garnish)
Instructions
Heat olive oil or butter in a nonstick or cast-iron skillet over medium heat.
Sprinkle a thin layer of feta in the skillet to form a “nest.”
Crack an egg into the center of the feta.
Cook 2–3 minutes for soft yolks; cover briefly if you want a firmer yolk.
Season with salt and freshly ground black pepper.
Garnish with fresh herbs if desired. Serve immediately with toast, salad, or avocado.
