A restaurant-quality sandwich featuring golden-fried breaded chicken, fresh romaine lettuce, Parmesan cheese, and creamy Caesar dressing on toasted ciabatta bread.

- 2 large boneless chicken breasts
- 1 cup all-purpose flour
- 1.5 cups panko breadcrumbs
- 2 large eggs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3/4 cup Caesar dressing
- 2 cups chopped romaine lettuce
- 4 slices ciabatta or sourdough bread
- 6–8 cherry tomatoes, halved
- 2 cups vegetable oil for frying
- 2 tablespoons butter
Instructions
- 1. Slice chicken breasts horizontally to create thinner cutlets and pat completely dry with paper towels.
- 2. Set up three shallow dishes: one with seasoned flour, one with beaten eggs and water, and one with breadcrumbs mixed with Parmesan and spices.
- 3. Dredge each chicken piece in flour, then egg mixture, then press firmly into breadcrumb mixture. Let rest on wire rack for 10 minutes.
- 4. Heat vegetable oil in large skillet to 350 degrees Fahrenheit.
- 5. Carefully place breaded chicken in hot oil and cook 4-5 minutes per side until golden brown and internal temperature reaches 165 degrees Fahrenheit.
- 6. Transfer cooked chicken to wire rack to drain.
- 7. Toast bread slices in butter until golden and crispy.
- 8. Spread Caesar dressing on bottom bread slice, add romaine lettuce, place chicken cutlet on top, add tomatoes and extra Parmesan.
- 9. Drizzle with more Caesar dressing, add top bread slice, and slice diagonally to serve.
Notes
Store cooked chicken in airtight container in refrigerator for up to 3 days. Reheat in 375°F oven for 10 minutes to maintain crispiness. Can freeze breaded uncooked chicken for up to 3 months. Assemble sandwich just before eating for best texture.
