Ingredients
12 oz rotini or bow tie pasta
1 cup frozen peas, thawed
1/2 cup bell pepper, finely diced
1/2 cup celery, finely diced
1/2 cup shredded turkey bacon (or beef bacon)
1/2 cup mayonnaise
1/4 cup plain Greek yogurt
1 tbsp Dijon mustard
1 tbsp apple cider vinegar or lemon juice
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and black pepper to taste
Fresh parsley or chives for garnish
Instructions
Cook pasta according to package directions until just tender (al dente). Drain and rinse with cold water.
In a large bowl, combine cooled pasta, peas, bell pepper, celery, and shredded turkey bacon.
In a separate small bowl, whisk together mayonnaise, Greek yogurt, Dijon mustard, vinegar or lemon juice, garlic powder, onion powder, salt, and pepper.
Pour the dressing over the pasta mixture and fold gently until everything is evenly coated.
Cover and chill in the refrigerator for at least 1 hour before serving to let flavors meld.
Garnish with fresh parsley or chives before serving.
Notes
For best texture, use short, ridged pasta like rotini or fusilli to hold the dressing.
Make the salad a day ahead to allow flavors to blend even better.
Add a splash of milk or extra Greek yogurt if the salad feels too thick after chilling.
Customize with your favorite vegetables or proteins—grilled chicken works beautifully.
