Ingredients
1 lb ground beef
1 medium onion, chopped
2 cloves garlic, minced
3 medium potatoes, diced
4 cups beef broth
1 ½ cups milk
1 cup heavy cream
8 oz Velveeta cheese, cubed
1 cup shredded cheddar cheese
Salt and pepper to taste
Instructions
Brown the ground beef in a large pot over medium heat. Drain any excess grease.
Add the chopped onions and garlic. Cook until softened, about 3 minutes.
Add the potatoes, beef broth, and bring to a simmer. Cook until the potatoes are tender.
Stir in the Velveeta cheese until melted and creamy.
Add the milk and heavy cream. Stir until smooth.
