  • 1 lb ground beef

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 3 medium potatoes, diced

  • 4 cups beef broth

  • 1 ½ cups milk

  • 1 cup heavy cream

  • 8 oz Velveeta cheese, cubed

  • 1 cup shredded cheddar cheese

  • Salt and pepper to taste


Instructions

  • Brown the ground beef in a large pot over medium heat. Drain any excess grease.

  • Add the chopped onions and garlic. Cook until softened, about 3 minutes.

  • Add the potatoes, beef broth, and bring to a simmer. Cook until the potatoes are tender.

  • Stir in the Velveeta cheese until melted and creamy.

  • Add the milk and heavy cream. Stir until smooth.
