- 8 ounces cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 2 cups shredded sharp cheddar cheese
- 2 cups frozen corn, thawed and drained
- 1/4 cup diced jalapeños
- 1/4 cup chopped green onions
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup crumbled bacon
Instructions
- 1. Preheat oven to 375°F and grease a 9-inch baking dish.
- 2. In a large bowl, mix softened cream cheese, sour cream, and mayonnaise until smooth and well combined.
- 3. Fold in 1.5 cups of shredded cheddar cheese, reserving 0.5 cup for topping.
- 4. Add thawed and drained corn, diced jalapeños, chopped green onions, and crumbled bacon to the mixture.
- 5. Stir in garlic powder, onion powder, cumin, salt, and black pepper until evenly distributed.
- 6. Transfer mixture to prepared baking dish and spread evenly.
- 7. Sprinkle reserved cheddar cheese over the top of the dip.
- 8. Bake for 25-30 minutes until edges are bubbling and cheese is golden brown.
- 9. Let cool for 5 minutes before serving with tortilla chips, crackers, or fresh vegetables.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in a 350°F oven until warmed through. Can be assembled up to 24 hours ahead and refrigerated before baking. Adjust jalapeños to taste for desired spice level.
