Description

Irresistibly creamy and addictive corn dip loaded with sharp cheddar cheese, crispy bacon, jalapeños, and sweet corn kernels. Perfect for parties and gatherings.


Ingredients

  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 2 cups shredded sharp cheddar cheese
  • 2 cups frozen corn, thawed and drained
  • 1/4 cup diced jalapeños
  • 1/4 cup chopped green onions
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crumbled bacon

Instructions

  1. 1. Preheat oven to 375°F and grease a 9-inch baking dish.
  2. 2. In a large bowl, mix softened cream cheese, sour cream, and mayonnaise until smooth and well combined.
  3. 3. Fold in 1.5 cups of shredded cheddar cheese, reserving 0.5 cup for topping.
  4. 4. Add thawed and drained corn, diced jalapeños, chopped green onions, and crumbled bacon to the mixture.
  5. 5. Stir in garlic powder, onion powder, cumin, salt, and black pepper until evenly distributed.
  6. 6. Transfer mixture to prepared baking dish and spread evenly.
  7. 7. Sprinkle reserved cheddar cheese over the top of the dip.
  8. 8. Bake for 25-30 minutes until edges are bubbling and cheese is golden brown.
  9. 9. Let cool for 5 minutes before serving with tortilla chips, crackers, or fresh vegetables.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in a 350°F oven until warmed through. Can be assembled up to 24 hours ahead and refrigerated before baking. Adjust jalapeños to taste for desired spice level.
