Ingredients
1 cup cottage cheese (smooth and creamy)
2 cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon salt
½ cup water (adjust as needed)
2 tablespoons olive oil (optional for extra softness)
Instructions
In a mixing bowl, combine the cottage cheese, flour, baking powder, and salt. Stir until the ingredients start to come together.
Slowly add water, a little at a time, and mix until a soft dough forms. If the dough is too sticky, add a bit more flour.
Turn the dough onto a lightly floured surface and knead for about 5 minutes until smooth and elastic.
Let the dough rest for 10 minutes.
Divide the dough into 6-8 equal pieces and roll each into a ball. Use a rolling pin to roll each ball into a thin round flatbread.
Heat a non-stick skillet or cast iron pan over medium heat. Place one flatbread in the pan and cook for 2-3 minutes per side, until golden brown and puffed.
Remove from the pan and keep warm in a clean kitchen towel.
Repeat with the remaining dough.
