Ingredients
All-purpose flour or whole wheat flour – base of the flatbread (whole wheat adds nuttiness)
Cottage cheese – preferably full-fat for a creamy texture (low-fat works too)
Baking powder or yeast – baking powder for quick rise, yeast for traditional flavor
Salt – to enhance flavor
Warm water or milk – to bind dough and keep it soft
Optional Add-ins:
Fresh herbs (dill, parsley, cilantro)
Garlic powder or onion flakes
Seeds (sesame, flax, chia)
Instructions
1. Mixing the Dough
Sift flour into a large mixing bowl.
Add baking powder and salt; mix well.
Slowly pour in warm water or milk while stirring until a shaggy dough forms.
2. Adding Cottage Cheese
Mix cottage cheese into the dough with a spoon or your hands until evenly distributed. Dough will be soft and slightly sticky.
3. Kneading the Dough
Transfer to a floured surface and knead for 5–7 minutes until smooth and elastic.
Add a little flour if too sticky.
4. Rolling & Shaping
Divide dough into equal portions.
Roll each into a ball, then flatten to about ¼ inch thick (circle, oval, or rectangle).
5. Cooking Methods
Stovetop:
Heat cast iron skillet or non-stick pan over medium heat.
Cook each flatbread 2–3 minutes per side until golden brown spots appear and bread puffs slightly.
Oven-Baked:
Preheat oven to 375°F (190°C).
Place flatbreads on parchment-lined baking tray.
Bake 10–12 minutes, flipping halfway, for a crispier result.
Notes
Use room-temperature ingredients for better dough texture.
Rest dough 20–30 minutes before rolling for softer bread.
Monitor heat to avoid burning.
